Cerro Negro 2022
Baldovar 923 - Spain
100% Mencia grape grown on calcareous silts. Unlike its counterparts from Galicia and León, it exhibits a distinctly Mediterranean profile, shaped by its high-altitude climate (over 1,000 meters above sea level, probably the highest Mencia in the Iberian Peninsula) and the surrounding aromatic scrubland. The grapes are destemmed and softly crushed before a gentle fermentation to extract the essence of the fruit. Matured in a mixture of old French oak and stainless steel.
Characteristics
In the glass, the wine presents itself with a violet border and intense ruby red color. In the nose, it is reminiscent of aromas of lavender flowers and geraniums, fresh strawberries and cherries, roasted wood, and a gentle earthiness that harmonizes the overall picture. In the mouth, it shows a soft and velvety entry with lively acidity and pleasant tannins.
Pairing
Pork, lamb, charcuterie, game.
