Pét Nat Brut 2023
Blend of Neuburger, Müller-Thurgau, and Riesling from 3 vineyards with limestone-clay rich soils. The grapes are hand-picked, and then macerated for about three hours before being carefully pressed. The must undergo almost the whole fermentation with its indigenous yeast in stainless steel tanks. In a late stage of fermentation – which is called “Sturm” in Austria – the unfinished wine is filled to continue the fermentation inside the bottle. This is how the carbon dioxide comes and stays inside. After 6 months, the bottles are riddled and disgorged to reduce the turbidity. For the dosage they use Gelber muskateller.
Characteristics
Light golden yellow, silver reflections, fine mousse. In the nose aromas of pear, mango, and a hint of elderflower. On the palate notes of orange zest and nutmeg. It’s very juicy as well as animating with elegant acidity and nice balance.

Aperitif, grilled fish, goat cheese.
