100% Mauzac from 40 years old vines grown on limestone-clay-rich soil near Carcassonne. Fermentation for one month, then the must is put in the bottle to make it bubbly. Manual dégorgement with zero dosage.
Characteristics
The nose is filled with beautiful exotic fruits, white flowers, peaches, and apples. The palate is well balanced with rich, fruity complexity complimented by soft bubbles and a lively acidity. Perfectly delicious.
